Key rules
1. Avoid products if you do not know what they contain and just use safe ingredients like:
  • Natural gluten-free products (vegetables, fruit, meat, fish, eggs, milk)
  • Food products included in the product list published by the Italian Celiac Association
  • Special dietary products (prepared by Ministry of Health authorised companies) like Bi-Aglut
2. Keep gluten-free products in a place reserved just for them;
3. Wash your hands carefully when you have made something using normal flours;
4. Before use, wash kitchen tools (pasta colander, spoons, pots) if they have been used to prepare food containing gluten;
5. Make sure there are no crumbs or flour traces on pans, grid-irons or grills;
6. Make sure the pasta cooking water and frying oil have had no contact with products containing gluten;
7. To flour food (meat, vegetable, cheese) and thicken sauces just use gluten-free flour;
8. Do not use the same coffee pot used to prepare barley coffee.
